Perfectly Fluffy Raisin Scones

  • Author: Poulef
  • Total Time: 25 minutes
  • Yield: 8 1x

Description

These Perfectly Fluffy Raisin Scones are buttery, tender, and lightly sweet, with golden crisp edges and chewy raisins in every bite. Made with simple pantry staples, they come together in just 30 minutes and are perfect for breakfast, brunch, or a cozy afternoon treat. Enjoy them warm with butter, jam, or clotted cream!

Ingredients

Scale
  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ cup unsalted butter, cold and cut into cubes
  • ½ cup raisins (or currants, if preferred)
  • ⅔ cup whole milk (plus extra for brushing)
  • 1 tsp vanilla extract (optional)
  • 1 large egg (optional, for brushing the top)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt
  • Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the texture resembles coarse crumbs
  • Stir in the raisins until evenly distributed
  • In a small bowl, mix the milk and vanilla extract, then pour into the dry ingredients. Stir gently until a dough forms—don’t overmix!
  • Turn the dough onto a lightly floured surface and pat it into a 1-inch thick round. Cut into 8 wedges
  • Place scones on the prepared baking sheet. Brush tops with milk or beaten egg for a golden crust
  • Bake for 15-18 minutes, or until golden brown
  • Let cool slightly before serving. Enjoy warm with butter, jam, or clotted cream!

Notes

  • For flakier scones, keep the butter cold – refrigerate the dough for 10 minutes before baking
  • Swap raisins for cranberries, chocolate chips, or chopped nuts for a different flavor
  • If using buttermilk instead of milk, reduce baking powder to 2 tsp and add ½ tsp baking soda
  • To make ahead, freeze unbaked scones and bake from frozen, adding 2-3 extra minutes to the baking time
  • Store baked scones in an airtight container at room temperature for 2 days or refrigerate for up to 5 days
