Ingredients
1 cup peanut butter
½ cup butter, softened
½ cup granulated sugar
½ cup brown sugar
1 egg
1¼ cups all-purpose flour
½ tsp baking soda
¼ tsp salt

Instructions
Preheat your oven to 350°F (180°C). Line baking sheets with parchment paper.
In a large bowl, beat together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
Mix in the egg until fully incorporated.
In a separate bowl, whisk together flour, baking soda, and salt. Slowly add dry ingredients to the wet mixture and mix just until combined.
Roll dough into 1-tablespoon balls and place on baking sheet. Flatten slightly using a fork in a crisscross pattern.
Bake for 8–10 minutes until the edges are golden. Let cool completely on a wire rack.
Spread a layer of your favorite filling on the flat side of one cookie, then sandwich with another.
