Ingredients
1 cup rolled oats
1/2 cup peanut butter
1/3 cup Greek yogurt
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 teaspoon baking powder
1/4 cup chocolate chips (for topping)
Instructions
1. Preheat oven to 350ยฐF (175ยฐC) and line a baking sheet with parchment paper.
2. In a large bowl, mix peanut butter, Greek yogurt, honey (or maple syrup), and vanilla until smooth.
3. Stir in rolled oats and baking powder to form dough.
4. Drop tablespoon-sized scoops onto the baking sheet.
5. Top each with chocolate chips.
6. Bake for 10โ12 minutes, then let cool slightly before serving.
Notes
For a vegan version, use plant-based yogurt and maple syrup. Store in an airtight container in the fridge for up to 1 week or freeze up to 3 months.
