Instructions

Simmer the Raisins: In a saucepan, bring 2 cups of water and raisins to a boil. Reduce heat and let simmer for 5 minutes. Remove from heat and allow to cool to lukewarm.

Preheat Oven & Prep Pan: Set your oven to 350ยฐF (175ยฐC). Grease a 9-inch cake pan or line it with parchment paper.

Mix Wet Ingredients: In a large bowl, cream together butter and brown sugar until smooth. Add eggs one at a time, mixing well. Stir in the cooled raisin mixture and vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients, mixing until just combined. Fold in walnuts, if using.
Bake: Pour the batter into the prepared pan. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
