Description

This Old-Fashioned Raisin Cake is a moist, warmly spiced treat that brings back comforting memories of home-baked goodness. Ingredients

  • 2 cups water

  • 1 cup raisins

  • 1 cup brown sugar (light or dark)

  • 1/2 cup unsalted butter (softened)

  • 2 cups all-purpose flour

  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon salt

  • 2 eggs (room temperature)

  • 1/2 cup chopped walnuts (optional)


Instructions

  • Simmer the Raisins: In a saucepan, bring 2 cups of water and raisins to a boil. Reduce heat and let simmer for 5 minutes. Remove from heat and allow to cool to lukewarm.

  • Preheat Oven & Prep Pan: Set your oven to 350ยฐF (175ยฐC). Grease a 9-inch cake pan or line it with parchment paper.

  • Mix Wet Ingredients: In a large bowl, cream together butter and brown sugar until smooth. Add eggs one at a time, mixing well. Stir in the cooled raisin mixture and vanilla extract.

  • Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients, mixing until just combined. Fold in walnuts, if using.

Bake: Pour the batter into the prepared pan. Bake for 35-40 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool & Serve: Let cool in the pan for 10 minutes, then transfer to a wire rack. Enjoy warm or at room temperature!

Notes

For extra moisture, add a tablespoon of honey or maple syrup to the batter.
