Description

These No-Bake Date Nut Energy Bars are naturally sweetened with dates and packed with almonds, seeds, and oats. Perfect for a healthy snack or quick breakfast—no oven needed!


Ingredients

Scale

1½ cups soft pitted dates

1 cup roasted almonds, roughly chopped

½ cup sunflower seeds or pumpkin seeds

½ cup rolled oats

¼ cup shredded coconut (optional)

2 tbsp chia seeds or flaxseeds

1 tbsp coconut oil or almond butter

½ tsp cinnamon (optional)

Pinch of salt


Instructions

1. Line an 8×8 baking pan with parchment paper.

2. Pulse the dates into a paste in a food processor.

3. In a mixing bowl, combine oats, nuts, seeds, coconut, cinnamon, and salt.

4. Add the date paste and coconut oil or almond butter. Mix thoroughly.

5. Press the mixture into the pan firmly.

6. Chill for at least 1 hour or freeze for 30 minutes until set.

7. Cut into bars and serve.

Notes

Store in the refrigerator for up to 2 weeks or freeze for up to 3 months.

Swap nuts and seeds as preferred. Add chocolate chips or spices to vary flavor.
