Description

  • Wet Ingredients:

    • 2 large eggs

    • 1 teaspoon vanilla extract

    • 2 cups grated carrots (about 3 medium carrots)

  • Optional Add-ins:

    • ยฝ cup chopped walnuts or pecans

    • ยฝ cup raisins

    • ยฝ cup shredded coconut


Instructions

  • Preheat your oven to 350ยฐF (175ยฐC). Grease a 9ร—5-inch loaf pan and line it with parchment paper for easy removal

  • In a large mixing bowl, whisk together flour, brown sugar, baking soda, baking powder, salt, cinnamon, and nutmeg

  • In another bowl, whisk together oil, applesauce, eggs, and vanilla extract until smooth

  • Pour the wet ingredients into the dry ingredients and gently fold together with a spatula. Do not overmix!

  • Stir in the grated carrots (and any optional add-ins) until evenly combined

  • Pour the batter into the prepared loaf pan and smooth the top

  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean

  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely

  • Use fresh carrots โ€“ Pre-shredded store-bought carrots are too dry. Freshly grated carrots add moisture
