Description
These gooey, crispy Keto Chocolate Coconut Bars are a low-carb twist on a classic summer treat. Gluten-free, sugar-free, and only 3g net carbs per serving.
Ingredients
1 cup Almond Flour
1/4 cup Coconut Flour
1/2 cup Sugar-Free Chocolate Chips
1/2 cup Unsweetened Shredded Coconut
1/4 cup Erythritol
1/4 cup Butter (melted)
2 Large Eggs
1 tsp Vanilla Extract
1/2 tsp Baking Powder
Pinch of Salt
Instructions
1. Preheat oven to 350°F. Line an 8×8 baking dish with parchment.
2. Mix almond flour, coconut flour, shredded coconut, erythritol, baking powder, and salt.
3. Whisk melted butter, eggs, and vanilla in a separate bowl.
4. Combine wet and dry mixtures until a dough forms. Fold in chocolate chips.
5. Spread in baking dish, press evenly. Bake for 18–22 mins.
6. Let cool completely before slicing into bars.
Notes
Store in the fridge up to 1 week or freeze up to 3 months.
For firmer texture, chill before serving. For gooey texture, microwave 10 seconds.
