Description
This moist and naturally sweetened Honey Almond Date Cake features almond flour, honey, and chopped dates with warm spices and an optional almond topping—perfect for cozy desserts or teatime.
Ingredients
150g (1 ½ cups) almond flour
100g (¾ cup) all-purpose flour
1 tsp baking powder
½ tsp baking soda
¼ tsp salt
1 tsp ground cinnamon
½ tsp ground cardamom (optional)
3 large eggs
120ml (½ cup) honey
100g (½ cup) chopped pitted dates
80ml (⅓ cup) olive oil or melted butter
1 tsp vanilla extract
60ml (¼ cup) milk or plant-based milk
Optional: 30g (¼ cup) sliced almonds for topping
Instructions

Preheat oven to 350°F (175°C). Grease or line a cake pan.

In a bowl, whisk together almond flour, all-purpose flour, baking powder, baking soda, salt, cinnamon, and cardamom.

In another bowl, whisk eggs, honey, olive oil, vanilla, and milk.

Fold in chopped dates.

Combine wet and dry ingredients until just mixed.

Pour into pan and top with sliced almonds.

Bake for 30–35 minutes. Cool before serving.
Notes
Soak dry dates to soften. Maple syrup can replace honey if needed. Store in the fridge or freeze for later.
