  • 2 refrigerated pie crusts (or homemade)
  • 1 ½ cups chopped pecans
  • 1 ½ cups pecan halves (for topping)
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 1 cup light corn syrup
  • ½ cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 4 large eggs
  • ½ cup water

Instructions

 

  1. Preheat & Prep – Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. Prepare the First Crust – Roll out one pie crust and place it in the bottom of the baking dish. Bake for 10-12 minutes until lightly golden.
  3. Make the Filling – In a large mixing bowl, whisk together melted butter, brown sugar, granulated sugar, eggs, corn syrup, vanilla, cinnamon, and salt. Stir in the chopped pecans.
  4. Assemble the Cobbler – Pour half of the pecan filling over the pre-baked crust. Place the second pie crust on top, then pour the remaining filling over it. Sprinkle the pecan halves evenly over the top.
  5. Bake to Perfection – Bake for 35-40 minutes, or until the crust is golden brown and the filling is bubbling. The center should still have a slight jiggle when done.
  6. Cool & Serve – Let the cobbler cool for at least 30 minutes before serving to allow the filling to set. Enjoy warm with ice cream or whipped cream!

Notes

  • Baking the bottom crust first prevents sogginess.
  • The cobbler will continue to set as it cools, so don’t worry if it looks a little soft when fresh out of the oven.
  • For a boozy twist, add 1-2 tablespoons of bourbon to the filling!
