Ingredients

½ cup (115g) unsalted butter, room temperature

¼ cup (50g) brown sugar (light or dark)

¼ cup (50g) granulated sugar

1 tbsp molasses or golden syrup

1 tsp vanilla extract

1 cup (125g) all-purpose flour

¼ cup (30g) cornstarch

½ tsp baking soda

¼ tsp salt

1 tsp ground cinnamon

¼ tsp ground ginger

⅛ tsp ground nutmeg

⅛ tsp ground cloves (optional)
Instructions

Cream together the butter, brown sugar, and granulated sugar until light and fluffy.

Mix in the molasses and vanilla extract until well combined.

In a separate bowl, whisk together flour, cornstarch, baking soda, salt, and all spices.

Gradually add dry ingredients to the wet mixture and beat until a dough forms.

Wrap and chill the dough for 30 minutes (optional but recommended).

Preheat oven to 350°F (175°C).

Roll dough to ¼″ thick and cut into desired shapes.

Place cookies on a parchment-lined baking sheet.

Bake for 10–12 minutes or until golden at the edges.
