  • 2 eggs (or flax eggs for a vegan version)
  • 1 ยฝ cups milk (dairy or plant-based)
  • 2 tablespoons melted coconut oil or butter
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350ยฐF (175ยฐC). Lightly grease an 8ร—8-inch baking dish or line with parchment paper.
  • Mix dry ingredients โ€“ In a large bowl, combine oats, baking powder, cinnamon, ginger, salt, and nuts (if using).

  • Combine everything โ€“ Pour the wet mixture into the dry ingredients and stir until fully incorporated.
  • Bake โ€“ Transfer mixture into the prepared baking dish and spread evenly. Bake for 30-35 minutes, or until the top is golden and set.

Notes

  • Make it vegan โ€“ Swap eggs for flax eggs and use plant-based milk.
  • Boost the sweetness โ€“ Add 1-2 tablespoons of maple syrup or honey if you like it sweeter.
  • Nut-free option โ€“ Skip the nuts or replace with sunflower seeds.
