  • 1 cup Greek yogurt (plain, full-fat or low-fat)
  • 2 eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned oats
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  • Mix wet ingredients – In a large bowl, whisk together Greek yogurt, eggs, honey (or maple syrup), and vanilla extract until smooth.
  • Mix dry ingredients – In another bowl, stir together oats, whole wheat flour, baking soda, salt, and cinnamon.
  • Combine – Gradually add dry ingredients to wet ingredients, stirring until just combined. Do not overmix.
  • Pour batter into the prepared loaf pan and smooth the top with a spatula.
  • Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  • Cool – Let the bread rest in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
