Description
Wholesome banana blondies made with Greek yogurt, oat flour, and gooey chocolate chips—perfect for a breakfast snack or healthy dessert!
Ingredients
2 ripe bananas, mashed
½ cup Greek yogurt
¼ cup honey or maple syrup
1 egg
1 teaspoon vanilla extract
1 cup oat flour
½ teaspoon baking soda
¼ teaspoon salt
½ teaspoon cinnamon
½ cup chocolate chips
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8″ pan with parchment or coat it.
2. Mash bananas until smooth.
3. Whisk in Greek yogurt, honey or maple syrup, egg, and vanilla.
4. Stir together oat flour, baking soda, salt, and cinnamon.
5. Fold dry ingredients into wet until just combined. Gently fold in chocolate chips, saving some to top.
6. Spread batter in pan, top with extra chips, and bake 20–25 minutes until golden with slightly moist crumbs.
7. Cool completely before slicing and serving.
Notes
Overripe bananas = sweeter blondies.
Use non-dairy yogurt for vegan option.
Don’t overbake—moist crumbs = perfect texture.
