This Flourless Walnut Coconut Cake with Greek Yogurt is nutty, tender, and naturally gluten-free! It’s the perfect wholesome dessert or breakfast—rich in texture and full of flavor.


Ingredients

Scale
  • ¾ cup finely chopped walnuts

  • ¾ cup unsweetened shredded coconut

  • 3 large eggs

  • ⅓ cup maple syrup or honey

  • ½ cup plain Greek yogurt

  • 1 tsp vanilla extract

  • 1 tsp baking powder

  • ¼ tsp salt

  • Optional: ½ tsp cinnamon

  • Optional toppings: Greek yogurt, toasted walnuts, coconut flakes


Instructions

  • Preheat oven to 350°F (175°C) and grease or line an 8-inch pan.

  • In a bowl, whisk eggs, yogurt, syrup/honey, and vanilla.

  • In another bowl, combine walnuts, coconut, baking powder, salt, and cinnamon.

  • Mix dry into wet until fully incorporated.

  • Pour into pan and bake 25–30 mins.

  • Cool, top as desired, and slice!

Notes

Use coconut yogurt for dairy-free. Add citrus zest or dark chocolate chips for a twist!
