This Flourless Walnut Coconut Cake with Greek Yogurt is nutty, tender, and naturally gluten-free! It’s the perfect wholesome dessert or breakfast—rich in texture and full of flavor.
Ingredients

¾ cup finely chopped walnuts

¾ cup unsweetened shredded coconut

3 large eggs

⅓ cup maple syrup or honey

½ cup plain Greek yogurt

1 tsp vanilla extract

1 tsp baking powder

¼ tsp salt

Optional: ½ tsp cinnamon

Optional toppings: Greek yogurt, toasted walnuts, coconut flakes
Instructions

Preheat oven to 350°F (175°C) and grease or line an 8-inch pan.

In a bowl, whisk eggs, yogurt, syrup/honey, and vanilla.

In another bowl, combine walnuts, coconut, baking powder, salt, and cinnamon.

Mix dry into wet until fully incorporated.

Pour into pan and bake 25–30 mins.

Cool, top as desired, and slice!
Notes
Use coconut yogurt for dairy-free. Add citrus zest or dark chocolate chips for a twist!
