  • 3 large ripe bananas, mashed
  • 2 ½ cups rolled oats (or 1 ¾ cups almond flour for a grain-free version)
  • 2 large eggs (or flax eggs for a vegan version)
  • ⅓ cup honey or maple syrup (optional, for extra sweetness)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon (optional, but recommended for extra flavor)
  • ¼ teaspoon salt

Optional Add-Ins:

 

  • ½ cup chocolate chips
  • ½ cup chopped walnuts or pecans
  • ¼ cup raisins or dried fruit
  • 2 tablespoons almond or peanut butter

Instructions

  • Preheat & Prep – Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
  • Blend the Oats (If Using) – If using rolled oats, blend them in a food processor or blender until they form a fine flour-like texture.
  • Mix the Wet Ingredients – In a large bowl, mash the bananas. Add eggs (or flax eggs), honey/maple syrup, and vanilla extract. Stir well.
  • Combine Dry Ingredients – Stir in the blended oats (or almond flour), baking soda, cinnamon, and salt. Mix until just combined.
  • Fold in Extras – If using chocolate chips, nuts, or dried fruit, fold them in now.
  • Bake – Pour the batter into the prepared pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

 

  • Cool & Enjoy – Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy!

Notes

  • For Vegan: Use flax eggs (1 tbsp flaxseed meal + 2.5 tbsp water per egg) and maple syrup instead of honey.
  • For Nut-Free: Stick to oat flour and skip the nuts.
  • For Extra Moisture: Add 2 tablespoons of Greek yogurt or a splash of almond milk.
