- 3 large ripe bananas, mashed
- 2 ½ cups rolled oats (or 1 ¾ cups almond flour for a grain-free version)
- 2 large eggs (or flax eggs for a vegan version)
- ⅓ cup honey or maple syrup (optional, for extra sweetness)
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon (optional, but recommended for extra flavor)
- ¼ teaspoon salt
Optional Add-Ins:
- ½ cup chocolate chips
- ½ cup chopped walnuts or pecans
- ¼ cup raisins or dried fruit
- 2 tablespoons almond or peanut butter
Instructions
- Preheat & Prep – Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
- Blend the Oats (If Using) – If using rolled oats, blend them in a food processor or blender until they form a fine flour-like texture.
- Mix the Wet Ingredients – In a large bowl, mash the bananas. Add eggs (or flax eggs), honey/maple syrup, and vanilla extract. Stir well.
- Combine Dry Ingredients – Stir in the blended oats (or almond flour), baking soda, cinnamon, and salt. Mix until just combined.
- Fold in Extras – If using chocolate chips, nuts, or dried fruit, fold them in now.
- Bake – Pour the batter into the prepared pan and smooth the top. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & Enjoy – Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack. Slice and enjoy!

- For Vegan: Use flax eggs (1 tbsp flaxseed meal + 2.5 tbsp water per egg) and maple syrup instead of honey.
