Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 3 cups fresh broccoli, chopped (or frozen, thawed and drained)
  • 1 can (10.5 oz) cream of chicken soup
  • ½ cup sour cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup milk
  • 1 ½ cups shredded cheddar cheese, divided
  • 1 cup cooked rice or egg noodles (optional, for a heartier dish)
  • ½ cup crushed Ritz crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  • Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • In a large bowl, mix together the chicken, broccoli, cream of chicken soup, sour cream, salt, pepper, garlic powder, onion powder, milk, and 1 cup of shredded cheese. If using rice or noodles, stir them in now.
  • Spread the mixture evenly into the prepared baking dish.
  • Sprinkle the remaining ½ cup of cheese over the top.
  • In a small bowl, combine the crushed Ritz crackers or breadcrumbs with melted butter, then sprinkle over the casserole.
  • Bake uncovered for 25-30 minutes, until the cheese is bubbly and the topping is golden brown.
  • Let cool for a few minutes before serving. Enjoy!

  • Use rotisserie chicken for a super quick and easy prep!
  • Fresh or frozen broccoli? Both work, but if using frozen, be sure to thaw and drain it well.
