Ingredients
Scale
- 1 tbsp olive oil
- 1 small onion, chopped
- 2 cups fresh spinach, chopped (or 1 ½ cups frozen spinach, thawed and drained)
- 4 large eggs
- 1 cup milk (or plant-based milk)
- 1 cup crumbled feta cheese
- ½ cup shredded mozzarella cheese
- ½ tsp dried basil
- Salt and pepper, to taste
- 1 tbsp fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
- Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until soft.
- Stir in the spinach and cook for 1-2 minutes, just until wilted. Remove from heat and let cool slightly.
- In a mixing bowl, whisk together the eggs, milk, dried basil, salt, and pepper. Stir in the crumbled feta and shredded mozzarella.
- Spread the sautéed onions and spinach evenly in the pie dish. Pour the egg mixture over the top, ensuring even distribution.
- Bake for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.
- Let the quiche cool for 5-10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.
Notes
- If using frozen spinach, make sure to squeeze out excess moisture to prevent a watery quiche.
- Swap feta for goat cheese, ricotta, or sharp cheddar for a different flavor twist.
- Make it dairy-free by using plant-based milk and dairy-free cheese.
- Store leftovers in the fridge for up to 4 days or freeze slices for up to 3 months.
