  • 1 tbsp olive oil
  • 1 small onion, chopped
  • 2 cups fresh spinach, chopped (or 1 ½ cups frozen spinach, thawed and drained)
  • 4 large eggs
  • 1 cup milk (or plant-based milk)
  • 1 cup crumbled feta cheese
  • ½ cup shredded mozzarella cheese
  • ½ tsp dried basil
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley (optional, for garnish)

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or baking dish.
  • Heat olive oil in a skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until soft.
  • Stir in the spinach and cook for 1-2 minutes, just until wilted. Remove from heat and let cool slightly.
  • In a mixing bowl, whisk together the eggs, milk, dried basil, salt, and pepper. Stir in the crumbled feta and shredded mozzarella.
  • Spread the sautéed onions and spinach evenly in the pie dish. Pour the egg mixture over the top, ensuring even distribution.
  • Bake for 35-40 minutes, or until the quiche is set and lightly golden on top. A knife inserted in the center should come out clean.
  • Let the quiche cool for 5-10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.

  • If using frozen spinach, make sure to squeeze out excess moisture to prevent a watery quiche.
