  • 2 boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt & black pepper to taste
  • 4 oz cream cheese, cubed
  • 1 ½ cups shredded cheddar cheese
  • 2 cups chicken broth
  • 8 oz spaghetti, broken in half

Instructions

  • Place chicken breasts in the crockpot and season with garlic powder, onion powder, salt, and pepper.
  • Add Rotel, cream of chicken soup, and chicken broth. Stir to combine.
  • Cover and cook on LOW for 6 hours or HIGH for 3-4 hours, until the chicken is fully cooked.
  • Remove the chicken, shred it with two forks, and return it to the crockpot.
  • Stir in the cubed cream cheese and shredded cheddar until melted and smooth.
  • About 30 minutes before serving, cook the spaghetti according to package instructions, then drain and add it to the crockpot. Stir well to coat the pasta in the creamy sauce.
  • Serve hot, garnished with extra cheese or fresh parsley if desired. Enjoy!

Notes

  • If the sauce is too thick, add a splash of warm milk or extra chicken broth to loosen it.
  • Want extra veggies? Stir in mushrooms, bell peppers, or spinach before serving.
