Ingredients
1 cup cottage cheese
3 large eggs, separated
¼ tsp cream of tartar
½ tsp baking powder
¼ tsp salt
¼ cup shredded mozzarella cheese (optional)
Instructions

Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

In a clean bowl, beat egg whites with cream of tartar until stiff peaks form.

In another bowl, blend cottage cheese, egg yolks, baking powder, salt, and mozzarella (if using) until smooth.

Gently fold the egg whites into the cottage cheese mixture in thirds—being careful not to deflate them.

Spoon mixture onto prepared sheet into 8 rounds.

Bake for 25–30 minutes, or until golden and set.

Turn oven off and let bread rest inside for 5 minutes. Cool on wire rack and enjoy!

Fresh eggs whip better—older eggs don’t hold peaks as well.
