Description

Ultra-light, protein-packed, and gently cheesy—this Fluffy Cottage Cheese Cloud Bread is the softest low-carb bread you’ll ever make. Gluten-free, high in protein, and irresistibly fluffy!


Ingredients

1 cup cottage cheese

3 large eggs, separated

¼ tsp cream of tartar

½ tsp baking powder

¼ tsp salt

¼ cup shredded mozzarella cheese (optional)


Instructions

  • Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.

  • In a clean bowl, beat egg whites with cream of tartar until stiff peaks form.

  • In another bowl, blend cottage cheese, egg yolks, baking powder, salt, and mozzarella (if using) until smooth.

  • Gently fold the egg whites into the cottage cheese mixture in thirds—being careful not to deflate them.

  • Spoon mixture onto prepared sheet into 8 rounds.

  • Bake for 25–30 minutes, or until golden and set.

 

  • Turn oven off and let bread rest inside for 5 minutes. Cool on wire rack and enjoy!

Notes

  • Be gentle folding the egg whites to keep the bread fluffy.

  • Fresh eggs whip better—older eggs don’t hold peaks as well.

  • Add herbs, seeds, or seasoning blends for a flavor twist.
