  • 2 cups plain flour
  • 1/2 cup desiccated coconut
  • 1/4 cup white sugar
  • 1/2 cup butter or margarine (room temperature)
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup raisins
  • 1 tsp vanilla essence
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon

Instructions

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Mix dry ingredients – In a large bowl, whisk together flour, desiccated coconut, sugar, baking powder, salt, and cinnamon.
  • Cut in butter – Add the butter and use a pastry cutter or fork to blend until the mixture resembles coarse crumbs.
  • Combine wet ingredients – In a separate bowl, whisk eggs, milk, and vanilla. Pour into the dry ingredients and stir gently.
  • Fold in raisins – Mix until just combined. The dough should be slightly sticky but manageable.
  • Shape the dough – Turn onto a floured surface, pat to ¾-inch thickness, and cut into triangles or rounds.
  • Bake – Place on the baking sheet, brush with a little milk, and bake for 15-18 minutes or until golden brown.
  • Cool & serve – Let cool slightly and enjoy warm with butter, jam, or honey!

Notes

  • For extra coconut flavor, swap regular milk for coconut milk.
  • If you prefer a sweeter scone, increase sugar to 1/3 cup.
  • Swap raisins for chocolate chips for a dessert-style version.
