Description

Ingredients
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
2 tsp vanilla extract
3 cups all-purpose flour
1 tbsp baking powder
½ tsp salt
1 cup coconut milk
1 cup sweetened shredded coconut
2 cups powdered sugar
3–4 tbsp coconut milk
½ tsp vanilla extract
Instructions
1. Cream butter and sugar until fluffy.
2. Add eggs one at a time, then vanilla.
3. Whisk flour, baking powder, and salt together.
4. Alternate adding flour mixture and coconut milk to wet ingredients.
5. Fold in shredded coconut.
6. Bake at 350°F for 35–40 minutes.
7. Whisk glaze ingredients and drizzle over cooled cake.
Notes
For extra flavor, top with toasted coconut flakes.
Use coconut cream instead of coconut milk for a richer glaze.
