Ingredients
2 very ripe bananas
½ cup granulated sugar
¼ cup brown sugar
½ cup unsweetened applesauce
1 large egg (or flax egg for vegan)
1 teaspoon vanilla extract
1 cup all-purpose flour
½ cup cocoa powder
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ cup mini chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
2. Mash bananas in a large bowl until smooth.
3. Stir in granulated sugar, brown sugar, applesauce, egg, and vanilla until well combined.
4. Sift in flour, cocoa powder, baking soda, baking powder, and salt. Mix gently until just combined.
5. Fold in chocolate chips, reserving some for topping.
6. Pour batter into prepared pan and bake 28–32 minutes, or until a toothpick comes out clean.
7. Cool, slice, and enjoy plain or with a dusting of powdered sugar.
Notes
Use very ripe bananas for the best sweetness.
For a vegan option, swap the egg for a flax egg.
Store leftovers in the fridge up to 5 days or freeze up to 3 months.
