Soft & Chewy Peanut Butter Greek Yogurt Oatmeal Cookie Bars are an irresistible blend of creamy peanut butter, wholesome oats, and tangy Greek yogurtโperfectly soft, chewy, and customizable with chocolate chips or raisins.
Ingredients
ยฝ cup creamy peanut butter
ยผ cup Greek yogurt
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1 cup oat flour
ยฝ cup rolled oats
ยผ teaspoon baking powder
ยผ teaspoon salt
ยผ cup chocolate chips or raisins
Instructions
1. Preheat oven to 350ยฐF (175ยฐC) and line an 8ร8โณ pan with parchment.
2. In a bowl, mix peanut butter, Greek yogurt, honey or maple syrup, and vanilla until smooth.
3. Add oat flour, rolled oats, baking powder, and salt. Stir until fully combined.
4. Fold in chocolate chips or raisins.
5. Press the dough evenly into the prepared pan.
6. Bake for 15โ18 minutes until edges are set and top is golden.
7. Let cool completely in the pan (about 30 minutes).
8. Lift out using parchment and slice into 9โ12 bars.
Notes
For vegan bars, use dairy-free yogurt and maple syrup.
To make nut-free, use sunflower seed butter instead of peanut butter.
Store in an airtight container at room temperature for 3 days or refrigerate up to 5 days.
Freeze individually for up to 3 months.
