Ingredients
Scale
- 1 cup unsalted butter, melted
- 2 cups brown sugar, packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups butterscotch chips
Instructions
- Preheat & Prep: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it.
- Mix Wet Ingredients: In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, whisking until fully combined.
- Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually stir the dry mixture into the wet ingredients until just combined.
- Fold in Butterscotch Chips: Gently stir in the butterscotch chips, making sure they’re evenly distributed throughout the batter.
- Bake: Spread the batter evenly into the prepared pan. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
- Cool & Slice: Let the blondies cool completely in the pan before slicing into squares. Enjoy!
Notes
- For extra chewiness: Use dark brown sugar instead of light brown sugar for a richer caramel flavor.
- Don’t overbake! The blondies should still look slightly underbaked in the center; they will continue to set as they cool.
- Storage: Store in an airtight container at room temperature for up to 5 days, in the fridge for up to a week, or freeze for up to 3 months.
