Chewy Butterscotch Blondies – The Ultimate Sweet & Buttery Treat!

  • Author: Poulef
  • Total Time: 35 minutes
  • Yield: 12-16 blondies 1x
  • Diet: Vegetarian

Description

These Chewy Butterscotch Blondies are soft, buttery, and packed with rich caramel-like butterscotch chips. They have a perfect chewy center, slightly crisp edges, and a deep brown sugar flavor that melts in your mouth. This one-bowl, no-fuss recipe is perfect for bake sales, potlucks, or simply treating yourself to something sweet.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 2 cups brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

  • 1 1/2 cups butterscotch chips

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper and lightly grease it.
  • Mix Wet Ingredients: In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla extract, whisking until fully combined.
  • Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually stir the dry mixture into the wet ingredients until just combined.
  • Fold in Butterscotch Chips: Gently stir in the butterscotch chips, making sure they’re evenly distributed throughout the batter.
  • Bake: Spread the batter evenly into the prepared pan. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.

  • Cool & Slice: Let the blondies cool completely in the pan before slicing into squares. Enjoy!

Notes

  • For extra chewiness: Use dark brown sugar instead of light brown sugar for a richer caramel flavor.
  • Don’t overbake! The blondies should still look slightly underbaked in the center; they will continue to set as they cool.
  • Storage: Store in an airtight container at room temperature for up to 5 days, in the fridge for up to a week, or freeze for up to 3 months.
