A quick and easy recipe for crispy quesadillas filled with seasoned ground beef and gooey cheese. Perfect for a fast dinner, snack, or party appetizer!

- 1 lb ground beef
- 1 packet taco seasoning
- 2 cups shredded cheese (Mexican blend, cheddar, or Monterey Jack)
- 8 medium-sized flour tortillas
- Olive oil or butter for cooking
- Optional toppings: sour cream (guacamole, salsa, chopped cilantro)
Instructions
- Heat a large skillet over medium heat and cook the ground beef until browned. Drain excess fat.
- Add taco seasoning and 2-3 tablespoons of water. Stir and cook for 2-3 minutes. Set aside.
- Lay a tortilla flat, sprinkle cheese on one half, layer with beef, then add more cheese. Fold in half. Repeat for all tortillas.
- Heat a small amount of oil or butter in the skillet. Cook each quesadilla for 2-3 minutes per side until golden and crispy.
- Slice into triangles and serve hot with desired toppings.
Notes
- For extra flavor, add sautéed onions and peppers to the filling.
- Store leftovers in the fridge for up to 3 days or freeze for up to 2 months.
- Reheat in a skillet for the best texture.
