Description

This Carrot Date and Walnut Loaf is moist, warmly spiced, and naturally sweetened with carrots and dates—perfect for breakfast, snacks, or afternoon tea.


Ingredients

  • 1½ cups self-raising flour

  • 1 tsp cinnamon

  • ½ tsp nutmeg

  • 1 cup brown sugar

  • 1 cup grated carrot

  • ½ cup pitted dates, chopped

  • ½ cup walnuts, chopped

  • 2 eggs

  • ½ cup vegetable oil

  • ¼ cup milk


Instructions

  • Preheat oven to 350°F. Grease and line loaf pan.

  • Whisk flour, cinnamon, nutmeg, and sugar. Stir in carrot, dates, walnuts.

  • Whisk eggs, oil, and milk. Fold into dry ingredients.

  • Pour into pan and bake 45–50 minutes. Cool before slicing.
