Description

This moist Carrot Date Almond Cake features sweet carrots, chewy dates, and ground almonds, topped with a luscious honey-lemon glaze for the perfect cozy treat.


Ingredients

Cake:

  • 150g chopped dates

  • 100g ground almonds

  • 200g all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • 2 large eggs

  • 120g butter

  • 100g brown sugar

  • 120ml milk

  • 1 tsp vanilla extract

  • 200g grated carrots

Glaze:

  • 100g honey

  • 2 tbsp unsalted butter

  • 1 tbsp lemon juice

  • 1 tsp lemon zes


Instructions

  • Preheat oven to 350°F. Line and grease a 9-inch pan.

  • Whisk flour, almonds, baking powder, soda, salt, and spices.

  • Cream butter and sugar. Beat in eggs, milk, and vanilla.

  • Fold in dry ingredients, carrots, and dates.

  • Bake 35–40 minutes.

  • Warm honey, butter, lemon juice, and zest for glaze. Brush over warm cake.

Notes

Let the cake absorb the glaze before slicing. Use fresh lemon juice for the brightest flavor.
