Ingredients
Scale
- 2 cups all-purpose flour
- 1 cup brown sugar, packed
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk, at room temperature
- ½ cup unsalted butter, melted and slightly cooled
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups pecans, chopped
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
- Mix dry ingredients: In a large bowl, whisk together the flour, brown sugar, baking soda, and salt until well combined.
- Mix wet ingredients: In a separate bowl, whisk together the buttermilk, melted butter, eggs, and vanilla extract until smooth.
- Combine: Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Do not overmix.
- Fold in pecans: Gently fold in the chopped pecans, ensuring even distribution throughout the batter.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
- Cool & Serve: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Enjoy!
Notes
- Don’t overmix the batter—this keeps the bread soft and tender.
- For extra crunch, toast the pecans before folding them into the batter.
- No buttermilk? Make a quick substitute by mixing 1 cup of milk with 1 tablespoon of vinegar or lemon juice. Let sit for 5 minutes before using.
- Freezes well! Wrap slices individually in plastic wrap and store in a freezer-safe bag for up to 3 months.
