Description

This Banana Nut Bread is golden, moist, and filled with sweet banana flavor and crunchy walnuts. A comforting, one-bowl recipe that’s perfect for breakfast, dessert, or a cozy snack any day of the week!


Ingredients

  • 2 to 3 ripe bananas, mashed

  • ½ cup melted butter

  • 1 cup sugar

  • 1 egg, beaten

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • Pinch of salt

  • 1½ cups all-purpose flour

  • ½ cup chopped walnuts or pecans (optional)


Instructions

  • Preheat oven to 350°F (175°C). Grease an 8×4 or 9×5 loaf pan.

  • In a large bowl, mash the bananas.

  • Stir in melted butter, sugar, egg, and vanilla.

  • Mix in baking soda and salt. Add flour and stir until just combined.

  • Fold in chopped nuts if using.

  • Pour batter into pan and bake for 50–60 minutes, or until a toothpick comes out clean.

  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use very ripe bananas for maximum sweetness

  • Can reduce sugar to ¾ cup for a less sweet loaf

  • Substitute butter with coconut oil for a dairy-free version

  • Add mini chocolate chips or a cinnamon swirl for variation
