  • 1½ cups fine oat flakes

  • ½ cup coconut oil

  • 1 cup sugar

  • 3 ripe bananas, mashed

  • 3 red apples, peeled and grated

  • ½ cup raisins

  • ½ cup walnuts, chopped

  • 1 tablespoon baking powder

  • 1 tablespoon ground cinnamon


Instructions

  • Preheat oven to 350 °F (175 °C) and grease a loaf or round cake pan.

  • In a large bowl, whisk together mashed bananas, eggs, sugar, and melted coconut oil.

  • Stir in oat flakes, baking powder, and cinnamon until just combined.

  • Fold in grated apples, raisins, and chopped walnuts.
