These Baked Apple Cinnamon Cottage Cheese Breakfast Bowls are warm, cozy, high-protein, and low-carb. Perfect for chilly mornings.
Ingredients
1 cup cottage cheese
2 large eggs
½ cup almond flour (or rolled oats)
1 tsp cinnamon
1 tsp vanilla extract
2–3 tbsp honey or maple syrup
½ tsp baking powder
Pinch of salt
1 medium apple, peeled and finely chopped
Instructions
1. Preheat oven to 350°F (175°C) and lightly grease baking dish.
2. Whisk cottage cheese, eggs, vanilla, and honey/maple syrup until smooth.
3. Stir in almond flour, cinnamon, baking powder, and salt.
4. Fold in chopped apples.
5. Pour mixture into dish and bake for 25–30 minutes until golden and set.
6. Cool for 5 minutes and serve warm.
Notes
Make ahead: Mix batter the night before, refrigerate, and bake in the morning.
Top with Greek yogurt, honey, or extra cinnamon for serving.
