¾ cup unsweetened applesauce

¾ cup granulated sugar

2 large eggs

1/3 cup vegetable oil

1 tsp vanilla extract

½ cup chopped walnuts or raisins (optional)
Instructions

Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan or line with parchment.

In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.

In another bowl, whisk together applesauce, sugar, eggs, oil, and vanilla until smooth.

Add wet mixture to dry ingredients and stir until just combined—don’t overmix!

Fold in chopped walnuts or raisins if using.

Pour the batter into the prepared pan and smooth the top.

Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice, serve, and enjoy!
