  • 1 ½ cups all-purpose flour

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg

  • ½ tsp ground ginger

  • ¼ tsp salt

  • ¾ cup unsweetened applesauce

  • ¾ cup granulated sugar

  • 2 large eggs

  • 1/3 cup vegetable oil

  • 1 tsp vanilla extract

  • ½ cup chopped walnuts or raisins (optional)


Instructions

  • Preheat oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan or line with parchment.

  • In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, ginger, and salt.

  • In another bowl, whisk together applesauce, sugar, eggs, oil, and vanilla until smooth.

  • Add wet mixture to dry ingredients and stir until just combined—don’t overmix!

  • Fold in chopped walnuts or raisins if using.

  • Pour the batter into the prepared pan and smooth the top.

  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Slice, serve, and enjoy!

Notes

  • Feel free to swap the walnuts or raisins for dates, pecans, or mini chocolate chips!

  • For a gluten-free version, use a 1:1 gluten-free flour blend.

  • If you use sweetened applesauce, reduce sugar to ½ cup.

  • This cake tastes even better the next day—perfect for make-ahead baking.
