This apple and carrot zucchini bread is moist, warmly spiced, and packed with fresh apples, carrots, and zucchini. The perfect cozy loaf for breakfast, brunch, or gifting.
Ingredients
ยฝ cup chopped pecans
1 cup diced apple
1 cup shredded zucchini, squeezed dry
2 cups shredded carrots
1 cup melted unsalted butter
2 cups granulated sugar
3 eggs, room temperature
ยผ cup orange juice
1 tbsp vanilla extract
ยฝ tsp salt
2ยฝ tsp baking powder
ยพ tsp baking soda
1 tsp ground cinnamon

tsp ground cloves
2ยฝ cups all-purpose flour
Instructions

Preheat oven to 350ยฐF. Grease and line loaf pans.

Whisk melted butter and sugar. Add eggs, juice, and vanilla.

Fold in carrots, zucchini, apples, and pecans.

Whisk dry ingredients, then mix into wet.

Pour into pans. Bake 50โ60 min until golden and set.

Cool before slicing.
Notes
Drain zucchini well. Use tart apples. Add walnuts or raisins for variety. Freezes well sliced.
