  • ½ cup (1 stick) unsalted butter, softened
  • ¾ cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups unsweetened applesauce
  • ½ cup chopped nuts (walnuts or pecans, optional)
  • ½ cup raisins (optional)

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9-inch cake pan or line it with parchment paper
  • In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt
  • In a separate bowl, beat butter and brown sugar until light and fluffy. Add egg and vanilla extract, then mix until smooth
  • Stir in the applesauce until well combined
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in nuts and raisins, if using
  • Pour the batter into the prepared pan and smooth the top
  • Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving

  • Use unsweetened applesauce for the best flavor balance
  • Do not overmix the batter—stir just until combined for a soft, tender crumb
  • For extra moisture, add ¼ cup sour cream or Greek yogurt
