5 large eggs

1 cup (200g) sugar

1 cup (125g) all-purpose flour
Instructions

Preheat oven to 350°F. Line an 8″ cake pan.

Beat eggs and sugar for 8–10 min until pale and fluffy.

Sift in flour in batches, gently folding to combine.

Pour into pan. Bake 35–40 min.

Cool 10 min, then transfer to wire rack.
Notes
Room temperature eggs work best. Don’t over-mix. Serve plain or dress it up with whipped cream and berries.
